It's Fall Chili Time!
I love Fall. It is my favorite Season! The Fall colors are gorgeous, the days are crisp, the leaves are falling, and the nights can be down right chilly! It is sweater weather and it is the time I start making my (or should I say my daughter's) Turkey Chili. It is a little bit of healthy and a little bit of hearty combined to make a wonderful fall veggie filled chili to warm you on those cool Fall nights.
What you will need:
- Ground Turkey ( I normally buy the 3lb size in hopes of left overs)
- A mix of Bell Peppers. (You can buy the pre-cut ones to save time)
- One Onion
- One Zucchini
- One Yellow Squash
- One can of diced tomatoes
- One can of tomato sauce
- One can of Beans (I like the Red Kidney Beans, but you can use another kind if you would like)
- Taco Seasoning
- Oh My Spice "Sweet and Savory" seasoning
- Olive Oil
Directions:
Rinse and drain your beans. Set aside.
Cut up your Veggies and Onion. Add a splash of Olive Oil in a skillet and add your veggies and onion. Add a little salt and pepper (if you would like to) and add the Sweet and Savory seasoning. I don't really measure this, but you could start out with 1 tbsp and add to taste.
Brown turkey in another skillet while your veggies are cooking.
Once the turkey is browned and cooked to your liking, add 1/2 package of taco seasoning and stir in. Then add the cooked veggies and onion to the turkey and stir. I then like to add a bit more of the Sweet and Savory seasoning. Next, stir in the can of diced tomatoes, tomato sauce, and the beans (stirring after adding each). Let simmer for 30 minutes.
My husband likes his chili with rice, so I cook the rice while the chili is simmering.
Serve with shredded cheese, rice, and sour cream or whatever you like to have with your Chili!
